Orzo with lemon chicken

1# boneless, skinless , chicken breast

salt and pepper

2 tsp olive oil

1:clove minced garlic

2 cups chicken broth

1-1/2 cups orzo, dried

2 cups chopped fresh spinach

1 cup graoe tomatoes, halved

3 tsp lemon juice

1/2 tsp basil

  1. Cut chicken in small bite sized dives
  2. in skillet sauté garlic in olive oil over medium heat
  3. add chicken and cook on both sides until golden brown and no longer pink
  4. remove chicken from pan
  5. add chicken broth to pan
  6. bring broth to a boil and stir in orzo,msikkwrm8-10 minutes until orzo is tender.
  7. stir in spinach, tomatoes, lemon juice and basil. Salt and pepper to taste
  8. remove from heat and add cooked chicken
