1# boneless, skinless , chicken breast
salt and pepper
2 tsp olive oil
1:clove minced garlic
2 cups chicken broth
1-1/2 cups orzo, dried
2 cups chopped fresh spinach
1 cup graoe tomatoes, halved
3 tsp lemon juice
1/2 tsp basil
- Cut chicken in small bite sized dives
- in skillet sauté garlic in olive oil over medium heat
- add chicken and cook on both sides until golden brown and no longer pink
- remove chicken from pan
- add chicken broth to pan
- bring broth to a boil and stir in orzo,msikkwrm8-10 minutes until orzo is tender.
- stir in spinach, tomatoes, lemon juice and basil. Salt and pepper to taste
- remove from heat and add cooked chicken
